Working Parents Creative Lunches Ideas

When it comes to packing a creative but healthy lunch for work all comes to mind is a quick salad. Don’t get me wrong there is nothing wrong with a salad but sometimes we would want something that looks fun and tasty.

Being in this pandemic it is quite different now. Before the pandemic packing lunches to bring to work was my everyday routine mostly. Now that majority of us are working remotely having a healthy and creative lunch is still something for us to consider.

Healthy and Creative Lunch Ideas

  1. Tuna Salad Protein Box

On Sunday’s that is soul food day for dinner being that we are at church on Sundays and others use that day as a rest day. So using Monday as a refresher day for our bodies to get back on the healthier side of eating. So tuna for me is an awesome protein to kickback right. Tuna made with some light mayo and mustard and on the side have 3 sliced apples and 1 cup of all natural almonds and 1 boiled egg sliced.

2. Taco Tuesday

Monday’s dinner can make an awesome leftovers for taco’s. Usually we have chicken on Monday’s dinner so shredding the chicken for taco’s is an awesome idea. Shredded chicken along with diced tomatoes, lettuce, avocado, shredded cheese and light sour cream with either some brown rice or a wheat tortilla works remarkable for a lunch.

3. Meatless Lunch Box

A Meatless lunch is a remarkable way to give your digestion a break from meats and especially at lunch. Black Beans and brown rice is an awesome combination of protein while also getting that fiber needed to be satisfying and favorable. Along side of will be fresh tomatoes, avocado and some salsa to spicy things up.

4. Veggie Day

Nothing goes wrong with having some veggies for lunch. Having a bowl of veggies, such as, broccoli, cauliflower along side of some carrots and mushrooms. These items can be easily cooked in the air fryer and then the mushrooms and with some onions and bell peppers can be sautéed.

5. Curried Chickpeas and Kale

Chickpeas is an astonishing source of nutritious protein, fiber and works well with aiding weight loss and a great source for a meat replacement. Preparing chickpeas in a skillet and putting curry seasoning to make it taste great. Along side of the chickpeas can be some brown rice, spinach or kale. This meal will surely keep you energized throughout the day.

6. Mediterranean Salad

A Mediterranean salad is a great choice when it comes to not eating a boring salad. This salad consist of cucumbers, tomatoes, sliced purple onion, parsley, feta cheese and some kalamata olives, the olives makes the salad taste so awesome. This salad has so much protein and fiber it will keep you surely satisfied throughout the day.
